Greetings Griffins!

We are grateful to have partnered with Adobo Catering for the last year and a half to provide nutritious school lunches for our students and faculty. Adobo recently let us know that they needed to step away from the lunch program at Santa Fe Prep. After surveying several options, we are fortunate that our own Eduardo Beltran has accepted our invitation to serve as Chef of our new, in-house lunch program.

Eduardo is from Mexico City. He moved to the US in 2000 and began working as a sous-chef at Crown Plaza, San Marcos, and Italian Rustic Restaurant in Chandler, Arizona. In 2010, he moved to Santa Fe, where he managed the Body Cafe Restaurant for two years, followed by working as a Chef and Event Captain for Walter Burke Catering, where he has been for the last 12 years. Already a Blue Griffin, Eduardo has also worked in Prep’s maintenance department for the past five years. Eduardo’s true calling and passion is in the kitchen, where he is skilled in preparing Italian, American, and traditional and gourmet Mexican cuisine. He will be joined by Martha Rivera and Luis Piñon.

We hope that the Prep community will continue to preorder as much as possible so as to reduce food waste. With that, please know that all are still welcome to purchase a meal in the lunch room without preordering. It is also important to note that cash/check payments will not be taken in the lunch room at the point of sale; instead, individual EZ School accounts will be debited.
